I started building about a month ago.. so far, I've got the keel laminated, planed and about ready for the bottom. I also built a gaff and jaws, leathered the jaws. Oh, and I couldn't resist building the wheel, of course!
My keel is redwood outer layers with a core of doug fir, fastened with stainless deck screws and laid up with Weldwood PRG. It's worked very well. I hand-planed the top of the keel, checking carefully with a try-square all along. It looks like boatbuilding consists mainly of buying a lot of expensive wood, then turning half of it into sawdust and shavings!
