I would suggest the "KISS" method. "Keep it simple, silly". Stick with the plans as designed. I see no benefit with the foam. On the other hand, experimenting might be where you get your enjoyment. If you really want to do this---then go for it. But one outcome with experimentation, is getting poor results. You just "chalk it up to experience and move on to the next project. Either way, I hope you enjoy the ride!

About 5 years or so ago, someone built a Spindrift entirely out of foam. Can't recall who, but I do seem to recall that once it was glassed to give it the structural integrity it needed, it wound up weighing about as much or more than the plywood version.

 

But I also seem to recall it did float and once he got it painted, it worked just about the same. Have not heard much about that boat since.
