What skin kayak designs are best for someone 6'4 and 270lbs?
Kayak will be used on a lake for cruising.
Is it a good idea (or bad) to take a design for a smaller person and scale it up 5% or 10%?

Other than Shad, any of them should work for you. Shad would probably be a very snug fit. I would say for an all around boat VARDO is just hard to beat. It has lots of room and I am pretty sure you would fit with room to space. Firefly offers higher volume version too.
Weight is not an issue. All my boats are designed around a total displacement of 250 lbs. So your looking at a displacement of around 295-310 lbs and that is no problem.
Even though you read about it, I do not recommend scaling a design. You are then building a totally new boat that may not preform like the original design. Strange things happen when you start changing boats like that. Besides, with my full sized plans you loose any advantage and create yourself a lot of work.

Nicely quoted by Kudzu, I agree with him. Scaling a design might some uknown issues and may hamper the overall plan.

I forget to mention VARDO. It's a higher volume boat that was designed with camping in mind but it is a sweet paddling boat and has been very popular.
